Named after François' father, Cuvee Paul is an incredibly rare wine made from La Grande Côte and set aside as having the greatest potential for ageing. It is not made every year. A hark back to how Chavignol was made in the 40's and 50's it is made from very ripe grapes and shows gentle sweetness and incredible power.

Extremely Limited Production. Certified Organic & Biodynamic. "Expressive nose with frank notes of iodine, fresh seaweed and lemon notes. Lively attack, wine in tension which develops in the middle of the mouth to become more polished and charming. Invigorating marine freshness counterbalanced by a beautiful volume on the palate, an explosion of yellow fruits and a basket of citron... A pure, delicate and crystalline wine. A double vinification by maceration on the skins to enhance the aging in amphorae ... A vinification by Claire Niger. A good hour in a carafe will please him in the first years of his life. Great predictable guard."

Extremely Limited Production. Certified Organic & Biodynamic, single parcel of Chardonnay planted on Orthogneiss soils. 8 months of skin maceration in amphora. Continuing his exploration of the energy exchange between wine and vessel, this amphora aged Chardonnay is a lively and textured orange wine with apricot aromas and driving acidity. Just stunning and a truly exciting addition to Fred's Vin de France lineup. ---- "Flattering and expressive nose on notes of fig, quince, apricot, dried fig, currant grapes and bitter orange peel. Clean, frank, direct attack; very dry and tight wine that develops in the middle of the mouth to become more charming and playful, smooth tannins with good volume. A deep, pure and delicate wine with chiseled fruit, notes of sweet spices, saffron. Long persistence. Leave this bottle in your cellar at least 1 or 2 years before opening... A wine vinified in maceration to enhance aging in amphorae; great predictable aging potential, long decanting recommended in the early years."

Extremely Limited Production. Certified Organic & Biodynamic, from a Chenin Blanc parcel named "Pascaline" planted in 2014 on Orthogneiss soils. Aged 10-12 months on the lees in amphora. Nofining, no filtration, no sulfur...just pure chenin! ---- A complex and powerful Chenin with real energy and focus. Matris means "mother" in latin -- a lovely nod to the pedigree of the Chenin grape in Orthogneiss terroirs. Don't sleep on this wine as it won't stick around for long! ---- "The 2018 Chenin Blanc Matris emerges from relatively young Chenin Blanc vines, planted in 2014. It was fermented in underground concrete tanks and aged 10 to 12 months in amphora. The nose is a tropical bounty. In the mouth, there’s pineapple and more pineapple: fresh, then baked, then grilled, then dipped in soy sauce. All balanced by cool minerality and a bit saline at the finish. 2020 Melon de Bourgogne VdF
Biodynamically farmed, demeter certified since 1998. All hand-harvested. Aged total of 24 months: 12 months on the fine lees in underground concrete tanks, then 12 months on the fine lees in four year old burgundy barrels. No fining or filtration. A mineral-driven nose with aromas of lemon, grapefruit, white flowers and toasted almonds. The palate is rich and mouth-coating, but a driving energy and vivacity that brings incredible balance and length to this singular Melon de Bourgogne.
